High Protein Beef and Broccoli Bowl with Garlic Ginger Sauce

Ingredients
  

  • 1 pound flank steak thinly sliced against the grain
  • 3 cups broccoli florets
  • 2 cups cooked white rice
  • 2 tablespoons cornstarch
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger grated
  • 3 cloves garlic minced
  • 1 cup beef broth
  • 2 tablespoons avocado oil
  • 1 teaspoon sesame oil
  • 1 teaspoon black pepper
  • 2 green onions sliced

Method
 

  1. Slice the beef thinly against the grain and toss with 1 tablespoon cornstarch until evenly coated.
  2. In a small bowl whisk together soy sauce, oyster sauce, honey, ginger, garlic, beef broth, and remaining cornstarch until smooth. Set aside.
  3. Heat 1 tablespoon avocado oil in a large skillet over medium high heat. Add the beef in a single layer and cook for 2 to 3 minutes per side until browned. Remove and set aside.
  4. Add remaining oil to the skillet and stir in the broccoli. Cook for 4 to 5 minutes, stirring occasionally, until bright green and slightly tender but still crisp.
  5. Return the beef to the skillet and pour in the sauce. Stir continuously for 2 to 3 minutes until the sauce thickens and coats the beef and broccoli.
  6. Drizzle with sesame oil and sprinkle black pepper and green onions over the top.
  7. Serve hot over cooked rice.

Notes

Slice the beef as thin as possible for the most tender texture and quick cooking. Cook beef to a minimum internal temperature of 145°F and allow to rest for 3 minutes for food safety.
