High Protein Corn Dip with Cottage Cheese and Sweet Corn

Ingredients
  

For the Dip
  • 3 cups corn kernels fresh, frozen and thawed, or canned and drained
  • 1 cup low fat cottage cheese
  • 3/4 cup plain nonfat Greek yogurt
  • 1/2 cup shredded reduced fat cheddar cheese
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 jalapeño finely diced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons finely diced red onion

Method
 

  1. Heat a large skillet over medium high heat. Add the corn and cook for 5 to 7 minutes until lightly charred in spots. Remove from heat and allow to cool slightly.
  2. Add the cottage cheese, Greek yogurt, lime juice, chili powder, garlic powder, onion powder, salt, and black pepper to a blender. Blend until smooth.
  3. Transfer the mixture to a large bowl.
  4. Stir in the charred corn, cheddar cheese, jalapeño, cilantro, and red onion until evenly combined.
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.
  6. Serve chilled with fresh vegetables, whole grain crackers, or baked tortilla chips.

Notes

For even more texture, reserve 1/2 cup of the corn and stir it in after blending the base. This creates a creamier dip with bursts of sweet corn in every bite.
