- Add the cottage cheese to a blender and blend until completely smooth.
- Transfer the blended cottage cheese to a small saucepan over medium-low heat.
- Stir in the cheddar cheese, diced tomatoes with green chiles, garlic powder, onion powder, cumin, chili powder, and salt.
- Cook for 5 to 7 minutes, stirring frequently, until the cheese is melted and the queso is smooth and creamy.
- Remove from the heat and stir in the cilantro.
- Serve warm with vegetables, whole grain tortilla chips, tacos, burritos, or grain bowls.
Notes
If the queso thickens as it cools, stir in 1 to 2 tablespoons of warm milk until it reaches your preferred consistency.
