Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups marinara sauce
  • 3 cups low sodium chicken broth
  • 8 ounces lasagna noodles broken into pieces
  • 1 cup low fat cottage cheese
  • 1/2 cup grated parmesan cheese
  • 1 cup fresh spinach
  • 2 tablespoons chopped fresh basil

Method
 

  1. Heat olive oil in a large pot over medium heat. Add ground beef, garlic powder, Italian seasoning, salt, and black pepper. Cook for 6 to 8 minutes until browned and fully cooked.
  2. Stir in marinara sauce and chicken broth. Bring the mixture to a gentle boil.
  3. Add broken lasagna noodles and cook for 10 to 12 minutes, stirring occasionally, until noodles are tender.
  4. Reduce heat to low and stir in cottage cheese and parmesan cheese until fully incorporated and creamy.
  5. Add fresh spinach and cook for 1 to 2 minutes until wilted.
  6. Remove from heat and top with chopped basil before serving.

Notes

Store leftovers in the refrigerator for up to 4 days. Add a splash of broth when reheating to loosen the soup.
