- Heat olive oil in a large pot over medium heat. Add ground beef, garlic powder, Italian seasoning, salt, and black pepper. Cook for 6 to 8 minutes until browned and fully cooked.
- Stir in marinara sauce and chicken broth. Bring the mixture to a gentle boil.
- Add broken lasagna noodles and cook for 10 to 12 minutes, stirring occasionally, until noodles are tender.
- Reduce heat to low and stir in cottage cheese and parmesan cheese until fully incorporated and creamy.
- Add fresh spinach and cook for 1 to 2 minutes until wilted.
- Remove from heat and top with chopped basil before serving.
Notes
Store leftovers in the refrigerator for up to 4 days. Add a splash of broth when reheating to loosen the soup.
