Ingredients
  

For the Mac and Cheese
  • 12 oz high-protein elbow pasta
  • 1 cup low-fat cottage cheese
  • 1/2 cup plain Greek yogurt
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley

Method
 

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain.
  3. While the pasta cooks, add the cottage cheese, Greek yogurt, milk, garlic powder, onion powder, paprika, salt, and black pepper to a blender.
  4. Blend until completely smooth.
  5. Transfer the blended mixture to a large saucepan over low heat.
  6. Stir in the cheddar cheese and Parmesan cheese a handful at a time until melted and smooth.
  7. Add the cooked pasta and toss until fully coated.
  8. If needed, stir in a splash of reserved pasta water to achieve the desired consistency.
  9. Cook for 1 to 2 minutes until heated through.
  10. Garnish with fresh parsley and serve immediately.

Notes

For even more protein, stir in shredded chicken breast before serving. The blended cottage cheese creates an ultra-creamy sauce while keeping the texture smooth and rich.
