For the Dip
  • 8 ounces reduced-fat cream cheese, softened
  • 1 cup plain Greek yogurt
  • 1 tablespoon taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/4 cup diced red onion
  • 2 green onions, sliced
  • 1/4 cup chopped fresh cilantro
  • 1 small jalapeño, thinly sliced

Method
 

  1. In a medium mixing bowl, combine the softened cream cheese, Greek yogurt, and taco seasoning until smooth and creamy.
  2. Spread the mixture evenly into a 9-inch serving dish or pie plate.
  3. Evenly distribute the black beans over the cream cheese layer.
  4. Sprinkle the shredded cheddar cheese over the beans.
  5. Top with the lettuce, tomatoes, red onion, green onions, cilantro, and jalapeño.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
  7. Serve chilled with tortilla chips, crackers, or fresh vegetables.

Notes

For the best texture, add the lettuce and tomatoes just before serving. This dip can be prepared several hours ahead and stored covered in the refrigerator until ready to enjoy.
