  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm milk
  • 1/4 cup honey
  • 2 tablespoons melted butter
  • 1 large egg
  • 2 cups bread flour
  • 1 cup old fashioned oats
  • 1 teaspoon cinnamon
  • 1 teaspoon salt

Method
 

  1. In a large mixing bowl, combine warm milk, honey, and yeast. Let sit for 5 minutes until foamy.
  2. Whisk in melted butter and egg until smooth.
  3. Add bread flour, oats, cinnamon, and salt.
  4. Stir until a shaggy dough forms, then knead for 8 to 10 minutes until soft and elastic.
  5. Transfer the dough to a lightly greased bowl. Cover and let rise for 1 hour or until doubled in size.
  6. Punch down the dough and shape into a loaf.
  7. Place the dough into a greased 9x5 inch loaf pan.
  8. Cover and let rise for another 30 minutes until puffy.
  9. Preheat the oven to 350°F.
  10. Bake for 32 to 36 minutes until golden brown and the loaf sounds hollow when tapped.
  11. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For extra texture, sprinkle additional oats on top before baking. This bread tastes especially good toasted with butter or a drizzle of warm honey.
