- Pat shrimp dry and season lightly with salt and black pepper.
- In a small bowl, whisk together honey, soy sauce, and lemon juice. Set aside.
- Heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2 to 3 minutes per side until pink and opaque. Remove shrimp and set aside.
- In the same skillet, add garlic and cook for 30 seconds until fragrant.
- Pour in the honey garlic sauce and let it simmer for 2 to 3 minutes until slightly thickened.
- Return shrimp to the skillet and toss to coat evenly in the sauce. Cook for another 1 to 2 minutes until heated through.
- Divide cooked brown rice into bowls. Top with broccoli, carrots, cucumber, and honey garlic shrimp.
- Garnish with green onions and serve immediately.
- Cook shrimp to an internal temperature of 145°F for safe consumption.
Notes
For the best texture, avoid overcooking the shrimp and add them back to the sauce only briefly to coat.
