Ingredients
  

For the Shrimp
  • 1 pound large shrimp peeled and deveined
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
For the Sauce
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1/4 cup honey
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon lemon juice
For Serving
  • 2 cups cooked brown rice
  • 1 cup steamed broccoli
  • 1 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 2 tablespoons chopped green onions

Method
 

  1. Pat shrimp dry and season lightly with salt and black pepper.
  2. In a small bowl, whisk together honey, soy sauce, and lemon juice. Set aside.
  3. Heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2 to 3 minutes per side until pink and opaque. Remove shrimp and set aside.
  4. In the same skillet, add garlic and cook for 30 seconds until fragrant.
  5. Pour in the honey garlic sauce and let it simmer for 2 to 3 minutes until slightly thickened.
  6. Return shrimp to the skillet and toss to coat evenly in the sauce. Cook for another 1 to 2 minutes until heated through.
  7. Divide cooked brown rice into bowls. Top with broccoli, carrots, cucumber, and honey garlic shrimp.
  8. Garnish with green onions and serve immediately.
  9. Cook shrimp to an internal temperature of 145°F for safe consumption.

Notes

For the best texture, avoid overcooking the shrimp and add them back to the sauce only briefly to coat.
