Ingredients
  

For the chicken
  • 2 boneless skinless chicken breasts about 8 ounces each
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
For the honey lime glaze
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
For serving
  • 2 ripe avocados sliced
  • 2 cups salad greens

Method
 

  1. In a small bowl whisk together honey and lime juice until smooth.
  2. Pat the chicken breasts dry and season both sides with salt and black pepper.
  3. Brush the honey lime mixture over both sides of the chicken and let sit for 10 minutes.
  4. Heat olive oil in a large skillet over medium heat until shimmering.
  5. Add the chicken and cook undisturbed for 6 to 7 minutes until golden brown.
  6. Flip and cook another 6 to 7 minutes, brushing with remaining glaze, until the internal temperature reaches 165 degrees Fahrenheit.
  7. Transfer the chicken to a plate and rest for 5 minutes before slicing.
  8. Arrange salad greens on plates and top with sliced chicken and avocado.
  9. Spoon any pan juices over the top and serve immediately.

Notes

Slice the avocado just before serving to keep it fresh and prevent browning.
