Ingredients
  

Coleslaw Mix
  • 4 cups coleslaw mix
  • 1 1/2 cups corn kernels
  • 1 jalapeno finely diced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup cilantro chopped
Dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Method
 

  1. In a large bowl, combine coleslaw mix, corn kernels, jalapeno, red onion, and cilantro.
  2. In a separate bowl, whisk together mayonnaise, sour cream, lime juice, honey, salt, black pepper, and garlic powder until smooth.
  3. Pour dressing over the coleslaw mixture.
  4. Toss well until evenly coated.
  5. Cover and refrigerate for at least 20 minutes before serving for the best flavor.
  6. Stir again before serving cold.

Notes

Fresh corn cut straight from the cob adds extra sweetness and crunch, but frozen thawed corn also works well for quick preparation. For a milder slaw, remove the jalapeno seeds before dicing.
