- In a large bowl, combine coleslaw mix, corn kernels, jalapeno, red onion, and cilantro.
- In a separate bowl, whisk together mayonnaise, sour cream, lime juice, honey, salt, black pepper, and garlic powder until smooth.
- Pour dressing over the coleslaw mixture.
- Toss well until evenly coated.
- Cover and refrigerate for at least 20 minutes before serving for the best flavor.
- Stir again before serving cold.
Notes
Fresh corn cut straight from the cob adds extra sweetness and crunch, but frozen thawed corn also works well for quick preparation. For a milder slaw, remove the jalapeno seeds before dicing.
