Ingredients
  

For the Bread
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sweetener
  • 1/4 teaspoon xanthan gum
  • 1/3 cup unsalted butter melted
  • 12 large egg whites room temperature
  • 1/4 teaspoon cream of tartar

Method
 

  1. Preheat the oven to 325 degrees Fahrenheit and line a loaf pan with parchment paper.
  2. In a large bowl, whisk together almond flour, coconut flour, baking powder, salt, sweetener, and xanthan gum until evenly combined.
  3. Stir in the melted butter until the mixture becomes crumbly.
  4. In a separate large bowl, beat the egg whites with cream of tartar using a hand mixer until stiff peaks form.
  5. Gently fold half of the whipped egg whites into the flour mixture until just combined.
  6. Transfer the mixture into the remaining egg whites and fold carefully until no streaks remain, keeping as much air as possible.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 40 minutes until lightly golden, then loosely cover with foil.
  9. Continue baking for 30 minutes until the loaf feels firm and the internal temperature reaches 200 degrees Fahrenheit.
  10. Cool completely in the pan before removing and slicing.

Notes

Allow the bread to cool fully before slicing to prevent a dense or gummy texture.
