- Preheat the oven to 325 degrees Fahrenheit and line a loaf pan with parchment paper.
- In a large bowl, whisk together almond flour, coconut flour, baking powder, salt, sweetener, and xanthan gum until evenly combined.
- Stir in the melted butter until the mixture becomes crumbly.
- In a separate large bowl, beat the egg whites with cream of tartar using a hand mixer until stiff peaks form.
- Gently fold half of the whipped egg whites into the flour mixture until just combined.
- Transfer the mixture into the remaining egg whites and fold carefully until no streaks remain, keeping as much air as possible.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 40 minutes until lightly golden, then loosely cover with foil.
- Continue baking for 30 minutes until the loaf feels firm and the internal temperature reaches 200 degrees Fahrenheit.
- Cool completely in the pan before removing and slicing.
Notes
Allow the bread to cool fully before slicing to prevent a dense or gummy texture.
