- Heat avocado oil in a large skillet over medium heat. Add ground beef and cook for 6 to 8 minutes, breaking it apart, until browned and fully cooked.
- Stir in chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper. Cook for another 2 minutes until fragrant and well combined.
- While the beef cooks, warm the black beans and corn in a small saucepan over low heat or in the microwave until heated through.
- In a small bowl mix Greek yogurt with lime juice until smooth.
- Assemble bowls by dividing cooked rice among serving bowls. Top with seasoned beef, black beans, corn, cherry tomatoes, and shredded lettuce.
- Add diced avocado and a dollop of the lime yogurt sauce. Sprinkle with shredded cheese and chopped cilantro.
- Serve immediately.
Notes
Swap brown rice for cauliflower rice to lower the carbs while keeping the bowl filling and flavorful.
