Ingredients
  

  • 1 pound lean ground beef
  • 1 tablespoon avocado oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
For Assembly
  • 2 cups cooked brown rice
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes halved
  • 1 cup shredded lettuce
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lime juice
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped cilantro

Method
 

  1. Heat avocado oil in a large skillet over medium heat. Add ground beef and cook for 6 to 8 minutes, breaking it apart, until browned and fully cooked.
  2. Stir in chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper. Cook for another 2 minutes until fragrant and well combined.
  3. While the beef cooks, warm the black beans and corn in a small saucepan over low heat or in the microwave until heated through.
  4. In a small bowl mix Greek yogurt with lime juice until smooth.
  5. Assemble bowls by dividing cooked rice among serving bowls. Top with seasoned beef, black beans, corn, cherry tomatoes, and shredded lettuce.
  6. Add diced avocado and a dollop of the lime yogurt sauce. Sprinkle with shredded cheese and chopped cilantro.
  7. Serve immediately.

Notes

Swap brown rice for cauliflower rice to lower the carbs while keeping the bowl filling and flavorful.
