Ingredients
  

  • 4 boneless skinless chicken breasts
For the Marinade
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For Serving
  • 1 tablespoon fresh parsley chopped

Method
 

  1. In a bowl whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  2. Place the chicken breasts in a shallow dish or resealable bag and pour the marinade over the chicken. Coat well and refrigerate for at least 30 minutes and up to 4 hours.
  3. Preheat grill to medium high heat about 400 degrees Fahrenheit. Lightly oil the grates.
  4. Remove chicken from marinade and place on the grill. Cook for 5 to 7 minutes per side until grill marks form and the chicken is cooked through to an internal temperature of 165 degrees Fahrenheit.
  5. Transfer chicken to a plate and let rest for 5 minutes.
  6. Sprinkle with fresh parsley before serving.

Serve with grilled vegetables, rice, or a fresh salad. Store leftovers in the refrigerator for up to 3 days. Ensure chicken reaches an internal temperature of 165 degrees Fahrenheit for safe consumption.
