- In a bowl whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
- Place the chicken breasts in a shallow dish or resealable bag and pour the marinade over the chicken. Coat well and refrigerate for at least 30 minutes and up to 4 hours.
- Preheat grill to medium high heat about 400 degrees Fahrenheit. Lightly oil the grates.
- Remove chicken from marinade and place on the grill. Cook for 5 to 7 minutes per side until grill marks form and the chicken is cooked through to an internal temperature of 165 degrees Fahrenheit.
- Transfer chicken to a plate and let rest for 5 minutes.
- Sprinkle with fresh parsley before serving.
