- Prepare the macaroni and cheese according to package directions and set aside warm.
- Lay the tortillas flat on a clean surface. Sprinkle 2 tablespoons of cheddar cheese over one half of each tortilla.
- Divide the macaroni and cheese evenly over the cheese layer on each tortilla.
- Spoon green chiles evenly over the macaroni and cheese.
- Scatter the chopped beef strips evenly over each tortilla.
- Top with the remaining cheddar cheese and fold each tortilla in half.
- Heat a large skillet over medium heat and add 1 tablespoon of butter.
- Place two folded quesadillas in the skillet and cook for 2 to 3 minutes until golden brown and crisp.
- Flip carefully and cook the second side for another 2 to 3 minutes until the cheese is fully melted.
- Transfer to a rack and repeat with remaining butter and quesadillas.
- Slice each quesadilla into wedges and serve warm.
Notes
Serve with fresh salsa, sour cream, or sliced avocado for added flavor and texture.
