Maple Dijon Salmon with Roasted Vegetables

Ingredients
  

Salmon and Vegetables
  • 4 salmon fillets about 5 to 6 ounces each
  • 2 cups broccoli florets
  • 1 cup carrots sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Maple Dijon Glaze
  • 2 tablespoons pure maple syrup
  • 1 tablespoon dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 tablespoon lemon juice

Equipment

  • Sheet pan
  • Parchment paper
  • Small bowl

Method
 

  1. Preheat oven to 400 degrees Fahrenheit and line a sheet pan with parchment paper.
  2. Place broccoli and carrots on the pan. Drizzle with 1 tablespoon olive oil and season with half of the salt and pepper. Toss and spread evenly.
  3. Roast vegetables for 10 minutes.
  4. In a small bowl whisk together maple syrup, dijon mustard, garlic powder, paprika, and lemon juice.
  5. Pat salmon dry and place on a plate. Brush generously with the maple dijon glaze.
  6. Remove the pan from the oven and push vegetables to the sides. Place salmon fillets in the center.
  7. Drizzle remaining olive oil over salmon and add any extra glaze on top.
  8. Return to oven and bake for 10 to 12 minutes until salmon flakes easily and reaches an internal temperature of 145 degrees Fahrenheit.
  9. Serve immediately with roasted vegetables.

Notes

Use fresh salmon for best texture and allow it to rest a few minutes after baking to keep it juicy.
