Method
- Preheat oven to 400 degrees Fahrenheit and line a sheet pan with parchment paper.
- Place broccoli and carrots on the pan. Drizzle with 1 tablespoon olive oil and season with half of the salt and pepper. Toss and spread evenly.
- Roast vegetables for 10 minutes.
- In a small bowl whisk together maple syrup, dijon mustard, garlic powder, paprika, and lemon juice.
- Pat salmon dry and place on a plate. Brush generously with the maple dijon glaze.
- Remove the pan from the oven and push vegetables to the sides. Place salmon fillets in the center.
- Drizzle remaining olive oil over salmon and add any extra glaze on top.
- Return to oven and bake for 10 to 12 minutes until salmon flakes easily and reaches an internal temperature of 145 degrees Fahrenheit.
- Serve immediately with roasted vegetables.
Notes
Use fresh salmon for best texture and allow it to rest a few minutes after baking to keep it juicy.
