Ingredients
  

  • 1.5 pounds boneless skinless chicken breasts cut into bite-sized pieces
  • 2 medium zucchini sliced into half moons
  • 1 pint cherry tomatoes halved
  • 1 small red onion thinly sliced
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup feta cheese crumbled
  • 1 cup mozzarella cheese shredded
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Preheat the oven to 400°F.
  2. Lightly grease a 9 x 13 inch baking dish.
  3. Add the chicken, zucchini, cherry tomatoes, and red onion to the baking dish.
  4. Drizzle with olive oil and sprinkle with garlic, oregano, basil, paprika, salt, and black pepper. Toss everything together until evenly coated.
  5. Spread the mixture into an even layer.
  6. Bake uncovered for 25 minutes until the chicken is nearly cooked through and the vegetables are tender.
  7. Remove the dish from the oven and sprinkle mozzarella and feta cheese evenly over the top.
  8. Return to the oven and bake for 8 to 10 minutes until the cheese is melted and bubbly.
  9. Garnish with fresh parsley before serving. Cook chicken to an internal temperature of 165°F for safe serving.
