Ingredients
  

  • 1/2 cup old fashioned rolled oats
  • 1/2 cup milk
  • 1/3 cup plain nonfat Greek yogurt
  • 1 teaspoon chia seeds
  • 1 teaspoon honey
  • 1/2 teaspoon vanilla extract
  • 1 medium peach diced
  • 1 tablespoon chopped pecans
  • 1/8 teaspoon ground cinnamon

Method
 

  1. In a mason jar or storage container, combine the oats, milk, Greek yogurt, chia seeds, honey, vanilla extract, and cinnamon.
  2. Stir until all ingredients are thoroughly combined.
  3. Fold in half of the diced peach.
  4. Cover and refrigerate for at least 6 hours or overnight.
  5. Before serving, stir the oats well.
  6. Top with the remaining diced peach and chopped pecans.
  7. Serve chilled.

Notes

For the best texture, use ripe peaches that are sweet and juicy. Prepare multiple jars at once for an easy grab-and-go breakfast throughout the week.
