- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken pieces and cook for 6 to 8 minutes until golden brown and fully cooked. Cook chicken to an internal temperature of 165°F for safe serving.
- Stir in the garlic and fresh ginger and cook for 30 seconds until fragrant.
- Add the bell pepper and broccoli and cook for 4 to 5 minutes until slightly tender.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, cornstarch, and water.
- Pour the sauce into the skillet and stir well.
- Add the pineapple chunks and cooked rice.
- Toss everything together and cook for 2 to 3 minutes until heated through and the sauce thickens slightly.
- Sprinkle with green onions and sesame seeds before serving.
Notes
Fresh pineapple adds the best flavor, but canned pineapple packed in juice works well for a quick shortcut.
