Ingredients
  

  • 3 pounds boneless skinless chicken breasts
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup barbecue sauce
  • 1 cup chicken broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey

Method
 

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Season the chicken with salt, black pepper, smoked paprika, garlic powder, and onion powder.
  3. In a bowl, whisk together barbecue sauce, chicken broth, apple cider vinegar, and honey.
  4. Pour the barbecue sauce mixture over the chicken.
  5. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until the chicken is tender and easy to shred.
  6. Remove the chicken from the slow cooker and shred it using two forks.
  7. Return the shredded chicken to the slow cooker and stir into the sauce.
  8. Let the chicken sit in the sauce for 10 minutes before serving.
  9. Serve on sandwich buns topped with coleslaw if desired.

Notes

For extra smoky flavor, use a hickory or mesquite style barbecue sauce.
