Ingredients
  

For the Lime Dressing
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon lime juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
For the Bowls
  • 2 cups cooked chicken breast, diced
  • 1 cup cooked brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin

Method
 

  1. In a small bowl, combine the Greek yogurt, lime juice, garlic powder, and half of the salt. Stir until smooth.
  2. Divide the brown rice between four serving bowls.
  3. Top each bowl with the chicken, black beans, corn, cherry tomatoes, and avocado.
  4. Sprinkle the chili powder, cumin, remaining salt, and cilantro evenly over the bowls.
  5. Drizzle the lime yogurt dressing over each bowl.
  6. Serve immediately.

Notes

For meal prep, store the avocado separately and add it just before serving to maintain freshness and texture.
