Ingredients
  

  • 1 pound ground turkey
  • 2 cups cooked white or brown rice
  • 1 tablespoon olive oil
  • 1 red bell pepper diced
  • 1 zucchini diced
  • 1 cup shredded carrots
  • 2 teaspoons garlic minced
  • 1 teaspoon fresh ginger grated
For the Sauce
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sriracha
  • 1 teaspoon chili flakes
  • 1 teaspoon sesame oil
For Garnish
  • 2 green onions sliced
  • 1 tablespoon sesame seeds

Method
 

  1. Heat olive oil in a large skillet over medium high heat. Add ground turkey and cook for 6 to 8 minutes breaking it apart until fully cooked and no longer pink.
  2. Add garlic and ginger to the skillet and cook for 30 seconds until fragrant.
  3. Stir in bell pepper zucchini and carrots. Cook for 4 to 5 minutes until vegetables are slightly tender but still crisp.
  4. In a small bowl mix soy sauce honey sriracha and chili flakes. Pour the sauce over the turkey mixture and stir well to coat evenly. Let it cook for 2 to 3 minutes so the flavors combine.
  5. Drizzle sesame oil over the mixture and stir. Remove from heat.
  6. Divide cooked rice into bowls and top with the spicy turkey mixture. Garnish with green onions and sesame seeds before serving.

Notes

Cook ground turkey to an internal temperature of 165°F for food safety. Adjust spice level by reducing or increasing sriracha and chili flakes.
