Ingredients
  

For the Salad
  • 2 cups cooked chicken breast shredded
  • 2 cups cucumber diced
  • 1 1/2 cups corn kernels cooked and charred
  • 1/4 cup red onion finely diced
  • 1/3 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
For the Dressing
  • 1/3 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Heat a skillet over medium-high heat.
  2. Add the corn kernels and cook for 4 to 5 minutes, stirring occasionally, until lightly charred.
  3. In a large bowl, combine the Greek yogurt, mayonnaise, lime juice, chili powder, garlic powder, salt, and black pepper.
  4. Add the shredded chicken, cucumber, charred corn, and red onion to the bowl.
  5. Toss everything together until evenly coated in the creamy dressing.
  6. Fold in the cotija cheese and cilantro.
  7. Chill for 15 minutes before serving for the best flavor.
  8. Serve cold.

Notes

For extra flavor, use grilled chicken and freshly cooked corn cut straight from the cob.
