Ingredients
  

For the Sweet Potatoes
  • 2 medium sweet potatoes peeled and diced into small cubes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
For the Ground Beef
  • 1 pound lean ground beef
  • 1 teaspoon onion powder
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
For Serving
  • 1 cup baby spinach
  • 2 tablespoons green onions chopped

Method
 

  1. Preheat oven to 425°F.
  2. Spread diced sweet potatoes on a baking sheet. Drizzle with olive oil and season with garlic powder, paprika, salt, and black pepper. Toss to coat evenly. Roast for 18 to 20 minutes until tender and lightly browned.
  3. While the sweet potatoes cook, heat a large skillet over medium heat. Add ground beef and cook for 6 to 8 minutes, breaking it apart, until fully browned and cooked through to an internal temperature of 160°F. Drain excess fat if needed.
  4. Stir in onion powder, honey, and soy sauce. Cook for another 2 minutes until the beef is evenly coated and slightly caramelized.
  5. Add baby spinach to the skillet and cook for 1 to 2 minutes until wilted.
  6. Divide roasted sweet potatoes into bowls and top with the honey ground beef mixture.
  7. Finish with chopped green onions and serve warm.

Notes

Store in airtight containers in the refrigerator for up to 4 days. Reheat until hot before serving.
