  • 1 cup low fat cottage cheese
  • 2 medium tomatoes diced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh chives
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon olive oil

Method
 

  1. Toast the bread slices until golden brown and crisp.
  2. In a small bowl, combine the diced tomatoes, lemon juice, basil, chives, salt, black pepper, and olive oil. Stir gently.
  3. Spread 1/4 cup cottage cheese evenly over each slice of toast.
  4. Spoon the tomato mixture over the cottage cheese.

Notes
