Ingredients
  

  • 2 large avocados halved and pitted
  • 2 cans tuna drained
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1/4 cup celery finely chopped
  • 2 tablespoons red onion finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped

Method
 

  1. Scoop a small amount of avocado from each half to create a larger cavity. Set aside the extra avocado.
  2. In a medium bowl, combine drained tuna, Greek yogurt, lemon juice, chopped celery, red onion, salt, and black pepper.
  3. Mash in the reserved avocado and mix until the filling is creamy and well combined.
  4. Spoon the tuna mixture evenly into each avocado half.
  5. Garnish with fresh parsley and serve immediately.

Notes

Serve right after assembling to keep the avocado fresh and prevent browning.
