For the salad
  • 4 cups watermelon cut into 1 inch cubes
  • 2 yellow peaches sliced
  • 3 small cucumbers sliced into rounds
  • 2 tablespoons shallot finely chopped
  • 4 tablespoons fresh mint torn
  • 2 tablespoons olive oil
  • 1/2 cup feta cheese cubed
  • Salt to taste
  • Black pepper to taste
For the vinaigrette
  • 4 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 2 cloves garlic finely chopped
  • 1 tablespoon shallot finely chopped
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste

Method
 

  1. In a large bowl, combine watermelon, chopped shallot, mint, and olive oil. Season lightly with salt and black pepper and toss gently.
  2. Cover and refrigerate for 1 to 2 hours to allow the flavors to develop.
  3. In a small bowl, whisk together olive oil, red wine vinegar, garlic, shallot, oregano, salt, and black pepper until well combined.
  4. Remove the watermelon mixture from the refrigerator and add sliced peaches, cucumbers, and feta cheese.
  5. Toss gently to combine without breaking the fruit.
  6. Transfer to a serving platter and drizzle evenly with the vinaigrette. Garnish with extra mint and serve chilled.
