Ingredients
  

  • 1 1/2 pounds boneless skinless chicken breast cut into bite-sized pieces
  • 3 zucchini medium, sliced into half moons
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Preheat the oven to 400°F.
  2. Lightly grease a 9 x 13-inch baking dish.
  3. In a large bowl, combine the chicken, zucchini, cherry tomatoes, olive oil, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Toss until evenly coated.
  4. Transfer the mixture to the prepared baking dish and spread into an even layer.
  5. Sprinkle the mozzarella and Parmesan cheese evenly over the top.
  6. Bake for 30 to 35 minutes until the chicken reaches an internal temperature of 165°F and the zucchini is tender.
  7. For a golden cheese topping, broil for 2 to 3 minutes at the end of cooking.
  8. Remove from the oven and let rest for 5 minutes.
  9. Garnish with fresh parsley before serving.

Notes
