Method
- Preheat the oven to 350°F.
- Line a 12-cup muffin pan with paper liners or lightly grease each cup.
- Squeeze excess moisture from the grated zucchini using a clean kitchen towel.
- In a large bowl, whisk together the eggs, Greek yogurt, honey, and vanilla extract.
- Stir in the zucchini.
- Add the oats, protein powder, baking powder, cinnamon, and salt. Mix until fully combined.
- Fold in the mini chocolate chips.
- Divide the batter evenly among the 12 muffin cups.
- Bake for 18 to 22 minutes until the tops are lightly golden and a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
Notes
Allow the muffins to cool completely before storing. They can be refrigerated for up to 5 days and freeze well for longer storage.
