Wet Ingredients
  • 1 cup plain Greek yogurt
  • 2 large eggs
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1/2 cup chocolate protein powder
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup oat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon kosher salt
Mix-ins
  • 1/3 cup mini chocolate chips

Method
 

  1. Preheat the oven to 350°F.
  2. Line an 8 x 8-inch baking pan with parchment paper.
  3. In a large mixing bowl, whisk together the Greek yogurt, eggs, honey, and vanilla extract until smooth.
  4. Add the protein powder, cocoa powder, oat flour, baking powder, and salt. Stir until a thick batter forms.
  5. Fold in the chocolate chips.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 20 to 24 minutes until the center is set and a toothpick inserted near the center comes out with a few moist crumbs.
  8. Allow the brownies to cool completely before slicing into 12 squares.

Notes

For extra fudgy brownies, avoid overbaking. The center should still feel slightly soft when removed from the oven as it will continue to set while cooling.
